Food is a big thing at Christmas time and several people think that everything served must be dripping in Goose Fat to be festive – to which we say “Bah Humbug” – If Charles Dickens were alive today he would be sure to love some of the festive healthy treats our team come up with at this time of the year.

So on the run up to Christmas we will be sharing some of our special recipes from the Hard Target Cookbook.

The simple little recipe from the Hard Target Cookbook is a great way to use up any left over turkey. This little gem makes a tasty and healthy alternative for St. Stephen’s day.

Cooking Time: 10 mins

Ingredients

  • 2 Large handfuls of turkey leftovers
  • 4 tsp olive oil
  • 2 red onions, thinly sliced
  • 200g mixed leaves
  • ½ cucumber, deseeded and sliced
  • 25g dried cranberries
  • 85g/3oz cranberry sauce
  • juice 1 lime

Method

1. Rip up Turkey leftover into strips, then rub with half the olive oil and season to flavour. Heat a non-stick frying-pan and fry the turkey for 3-4 mins on each side until cooked through. Set to one side on a plate.

2. Heat the remaining oil in the pan and salute the onions for 5 mins. Layer up your plate of turkey, with the onions, leaves, cucumber and dried cranberries.

3. Mix the cranberry sauce, lime juice, 2 tbsp water and any turkey resting juices, and drizzle over the salad. Serve and enjoy.
